seven ingredient salad

I'm a huge fan of quick, easy, healthy lunches. I'm always running around during week from the gym to auditions, to improv and acting class... Yesterday was one of those days. I looked at what I had in my fridge, and literally threw this together in about three minutes.

I had some leftover quinoa from a cookout we had this weekend. Quinoa is one of those things you can make a big batch of and add to your meals throughout the week. It goes great with almost everything - veggies, eggs, dips, etc.

Here is my super easy, super quick, 7 ingredient salad!



ingredients:
1. kale
2. quinoa
3. dry roasted slivered almonds
4. greek yogurt
5. lemon juice
6. balsamic vinegar
7. seasoning of your choice

for the salad:
1. put some kale on a plate (really difficult, I know... you know what they say - "start small")
2. add a few large spoonfuls of quinoa
3. sprinkle slivered almonds on top

for the dressing:
(if you have a Magic Bullet, it's super easy to throw this all into the half-size cup and blend, but you can easily just wisk ingredients in a bowl with a fork.)
1. take one large spoonful of greek yogurt (I use Fage 0%)
2. squeeze the juice of a few lemon wedges
3. drizzle some balsamic vinegar
4. add seasoning of your choice (I love Trader Joe's 21 seasoning & some fresh-grind lemon pepper)
5. blend or wisk
I ran up to the roof to enjoy my lunch and escape from it all for a bit. It's amazing how refreshed I feel after just ten minutes up here.
